Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. In a saucepan, bring 2 quarts of water to a boil.

  2. Gradually stir in ½ pound of corn meal until it boils steadily.

  3. Reduce heat and let it simmer for 1 hour.

  4. Season with a little salt.

  6. Serve as is, or strain and cook with milk or broth.

What each ingredient does

Corn meal
Forms the thick body of the gruel as its starch swells and gelatinizes in simmering water.

The step that matters

Gradually stir in the corn meal. Adding the meal slowly while the water is boiling keeps it from clumping into lumps. Stirring as it goes in helps the starch disperse evenly before it thickens during simmering.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (corn, wheat, flour, sugar, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits about as well
  4. Turmericfits less well

Fit is the average pairing score against corn, wheat, flour, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
