What each ingredient does

Cucumbers
Provide the crisp, watery flesh that becomes the pickle's main texture.
Coarse sea salt
Draws water out of the cucumbers, firming them before they are packed in vinegar.
Vinegar
Adds acidity that preserves the cucumbers and gives the pickle its sharp flavour.
Peppercorns
Contribute pungent aroma that flavours the vinegar and the cucumbers.
Bay leaves
Add a subtle herbal aroma to the pickling liquid.

The step that matters

Letting the cucumbers stand in salt. Salting for a full 10 hours draws out excess water, which firms the cucumbers. Turning them helps the salt reach all surfaces evenly, so the texture stays consistent and the pickle does not turn soft or uneven.
