Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Horse-radish root
Supplies the sharp, pungent heat that defines the sauce's flavour.
Cream sauce
Forms the creamy base that carries the flavours and gives the sauce body.
Butter
Adds richness and a smooth, glossy mouthfeel.
Meat glaze
Adds savoury depth and a deeper colour to the sauce.

The step that matters

Simmering the horseradish on low heat. Heat gradually breaks down horseradish's pungent compounds, so long or hard cooking dulls its bite. Low heat keeps the cream sauce from scorching or splitting while it simmers.

Swap the radish

How well each one fits the dish's main ingredients (horse, cream, sauce, butter, meat):

  1. Mustardfits better
  2. Potatofits better
  3. Onionfits about as well
  4. Radishthe original

Fit is the average pairing score against horse, cream, sauce, butter, meat. Candidates are from the same food group and used in at least 100 recipes.
