Ingredients
Directions
Dig up the roots and wash them.
Pound the roots into a pulp.
Place the pulp in water to separate the starch from the fibrous portion.
Remove the fibers by hand, leaving the starch suspended in the water.
Strain the milky fluid through a coarse towel.
Allow the fluid to stand so the flour can settle.
Wash the settled flour with fresh water.
Dry the flour in the sun.
