Morels Stuffed

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wash, clean, and trim the morels. Parboil them for 15 minutes, then immerse in cold water and drain on a napkin.

  2. Chop the trimmings and stems finely. In a saucepan, combine with butter and shallots. Cover and cook slowly until moisture is reduced.

  3. Let the mixture cool, then add the cooked forced meat and parsley. Stuff the morels with this mixture.

  4. Sprinkle fresh bread crumbs over the stuffed morels. Arrange them in a flat saucepan lined with thin slices of fat pork and place a small piece of butter on each.

  5. Moisten with broth and bake in the oven at 300°F (150°C) until nicely browned.

  6. Serve with a reduced Madeira wine sauce, adding a little chopped parsley.
