Mushroom Tartlets, with Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Butter and flour the tartlet moulds, then line them with a thin layer of puff paste.

  2. Slice the mushrooms finely and sauté them in a frying pan with butter and chopped shallots over medium heat for a few minutes.

  3. Season the mushrooms with salt, pepper, and parsley.

  4. Fill the tartlet moulds with the mushroom mixture and bake in the oven at 350°F (175°C) until nearly done.

  5. Beat the egg whites until frothy and mix in the cold reduced cream sauce.

  6. Remove the tartlets from the oven, pour the cream mixture over each one, and return them to the oven until nicely browned.

  7. Remove the tartlets from the moulds and serve on a napkin.
