What each ingredient does

White onions
Provide the flavour base that infuses into the vinegar during the two-week rest.
Wine vinegar
Acts as the acidic liquid that extracts and carries the onion flavour.
Coarse sea salt
Draws moisture out of the onions and seasons the vinegar.
Sugar
Adds a small amount of sweetness to balance the sharp acidity.

The step that matters

Pour the boiling vinegar over the onions while hot. Hot vinegar helps extract flavour from the onions more quickly and gives the sliced onions a gentle initial cook. Letting the vinegar cool first would slow infusion.
