Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rice
- Thickens the custard as it cooks down and gives it a smooth body once sieved.
- Egg yolks
- Set the custard when gently heated, giving it structure and richness.
- Milk
- Cooks with the rice to form a soft base and adds moisture.
- Cream
- Adds fat for a richer, silkier texture in the custard.
- Almond milk
- Adds liquid and a mild nutty flavour to the custard.
The step that matters
Poach the moulds gently. Egg yolks set into a smooth custard only at moderate heat. Boiling or fast heating makes the proteins tighten and curdle, leaving a grainy, watery texture.
Swap the almond

Fit is the average pairing score against rice, milk, sugar, nutmeg, egg, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
