What each ingredient does

Celery
Provides the crisp, crunchy texture that gives the salad its body.
Truffles
Contribute a strong, aromatic flavour that defines the salad.
Hard-boiled eggs
Their yolks, sieved, create a smooth, rich base that binds the dressing.
French mustard
Adds sharpness and helps emulsify the oil and vinegar into the dressing.
Oil
Adds fat and richness, carrying flavour through the dressing.
Vinegar
Adds acidity that brightens the flavours and balances the richness of the oil and yolks.

The step that matters

Diluting the dressing with oil and vinegar. Adding the oil and vinegar gradually while mixing lets the yolk and mustard emulsify into a smooth, stable dressing. Adding them all at once can cause it to separate and turn greasy.

Swap the garlic

How well each one fits the dish's main ingredients (celery, truffle, pepper, vinegar, egg, clove, mustard):

  1. Tarragonfits better
  2. Allspicefits better
  3. Thymefits better
  4. Garlicthe original
