Vienna Rolls

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Prepare the dough as for Crescents.

  2. Shape the dough into small Vienna loaves about six inches long.

  3. Place the loaves in a buttered pan, leaving space between each.

  4. Let the loaves rise until light.

Finish and bake

  1. Gash the tops diagonally three times if not brushing with eggs.

  2. If desired, brush the rolls with beaten eggs and sprinkle with poppy seeds instead of gashing.

  3. Bake in a moderate oven at 350°F (175°C) for about 25 minutes.

Beaten eggs
Brushed on the tops to add a glossy, golden browned finish.
