What each ingredient does

Sugar
Forms the sweet base, and its crystals set into the soft, smooth texture of the fondant.
Water
Dissolves the sugar so it can be boiled into a syrup.

The step that matters

Boil the sugar and water until the syrup spins a heavy thread. Sugar syrup must reach the right concentration before cooling. Too little boiling leaves the fondant runny, while too much makes it hard. The thread test checks that the syrup has reached the correct stage.
