Brown Stock

Ingredients

Directions

  1. Cut the lean meat into 1-inch pieces and brown it in a hot frying pan using the marrow from the bone.

  2. Put the bone and fat in a kettle and add the cold water. Let it stand for 20 minutes.

  3. Place the kettle over heat and bring to a boil, removing the scum as it rises.

  4. Add the browned meat, cover the kettle, and reduce heat to maintain a boil for 5 hours.

  5. Add the prepared vegetables and seasoning, then cook for an additional 2 hours.

  6. Strain the stock and cool immediately.
