What each ingredient does

Oysters
Provide the main flesh and their liquor adds savoury, briny flavour to the broth.
Butter
Adds richness and a silky mouthfeel to the finished stew.
Flour
Kneaded into the butter to thicken the liquid as it stews.
White wine
Adds acidity that brightens the broth and balances the richness of the butter.
Anchovy
Contributes deep savoury umami that enriches the broth without a fishy taste.

The step that matters

Adding the butter and flour mixture. Flour kneaded into butter and stirred into hot liquid thickens it smoothly, while adding it as a lump or letting it boil hard can leave clumps or a grainy, broken texture. Keep the stew at a gentle simmer so the oysters stay tender and do not toughen.

Swap the white pepper

How well each one fits the dish's main ingredients (oyster, white wine, anchovy, mace, butter, flour, bread):

  1. Nutmegfits better
  2. Capersfits better
  3. Parsleyfits better
