Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Preheat your oven to 400°F (200°C).

  2. Place the sirloin beef on a spit and roast for 3.5 to 4 hours, ensuring it cooks evenly.

  3. Add a little clean dripping to the dripping pan and cover it with a sheet of paper to preserve the fat.

  4. Baste the beef well as soon as it is placed in the oven, and continue basting every 15 minutes until the last half hour.

Brown and serve

  1. Remove the paper for the last half hour and prepare gravy by stirring the fire to make it clear.

  2. To brown the beef, sprinkle a little coarse sea salt over it, baste with butter, and dredge with flour.

  3. Let it roast for a few more minutes until frothy, then remove from the oven, place on a dish, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sirloin beef
Is the main cut that becomes the roast, providing the meat itself.
Butter
Bastes the surface, adding richness and helping the outside brown.
Flour
Dredged over the surface, helping form a browned crust and thicken the gravy.
Clean dripping
Fat in the pan that bastes the meat and keeps it moist as it roasts.

The step that matters

Basting the beef throughout roasting. Regular basting keeps the surface moist and carries fat over the meat, so the exterior browns evenly rather than drying out or scorching in patches.
