What each ingredient does

Pearl barley
Long simmering softens the grains and thickens the broth slightly.
Beef stock
Provides the savoury base liquid that carries the flavour of the soup.
Potatoes
Break down slightly during cooking, adding body and starch to the broth.
Onions
Release sugars as they cook, adding sweetness and depth to the soup.
