Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give a soft, tender interior.
Egg yolk
Binds the potato mixture and adds richness to hold the shape.
Cream
Adds moisture and softness to the potato mixture.
Beaten egg
Acts as a glue so the crumbs stick to the shaped croquettes.
Cracker or bread crumbs
Form a crisp outer coating that browns during frying.

The step that matters

Cool the mixture slightly before shaping. A warm, loose potato mixture is soft and sticky, so it can slump or tear when shaped. Cooling it lets the starch firm up enough to hold its form through the egg and crumb coating and the hot lard.

Swap the potato

How well each one fits the dish's main ingredients (egg, pepper, parsley, cream, bread):

  1. Spinachfits better
  2. Capsicumfits about as well
  3. Shallotfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, pepper, parsley, cream, bread. Candidates are from the same food group and used in at least 100 recipes.
