Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the soft, sweet filling that becomes tender when fried.
Biscuit or cracker crumbs
Form a crisp, golden coating that browns in the hot fat.
Powdered sugar
Sweetens the cut ends and helps them brown in the fat.
Orange juice
Adds acidity and fruity brightness that balances the sweetness.
Essence of ginger
Adds a warm, aromatic spice flavor to the bananas.

The step that matters

Frying in deep hot fat until golden brown. If the fat is not hot enough, the crumb coating absorbs oil and turns greasy before it crisps. Hot fat seals the coating quickly, keeping the banana inside soft and the outside crisp.

Swap the banana

How well each one fits the dish's main ingredients (sugar, orange, ginger, egg, wheat):
