Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a bowl, beat together the egg yolks, yeast, and sugar.

  2. Mash the boiled potato and add it to the mixture.

  3. Gradually mix in the flour and enough water or milk to form a soft dough.

  4. Cover and let the dough rise until doubled in size.

Shape and bake

  1. In the morning, roll out the dough and cut it into biscuit shapes.

  2. Let the biscuits rise again before baking them in a preheated oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the dough its structure.
Yeast
Produces gas that makes the dough rise and become light.
Egg yolks
Add richness and fat, helping the dough brown and feel tender.
Boiled potato
Adds moisture and starch, keeping the dough soft and slightly tender.
Lard or butter
Adds fat that tenderises the crumb and contributes to browning.

The step that matters

Letting the dough rise until doubled. Yeast needs enough time to produce gas and build structure; under-proofed dough bakes dense, while over-proofed dough can collapse and lose its shape.

Swap the potato

How well each one fits the dish's main ingredients (flour, egg, sugar, butter, milk):

  1. Sweet potatofits about as well
  2. Leekfits about as well
  3. Arrowrootfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, egg, sugar, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
