Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Cream Oysters

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Drain the oysters and chop them finely, then drain again.

  2. Bring the cream to a boil.

  3. Rub the flour and butter together, then stir into the boiling cream.

  4. Once thickened, remove from heat and add the chopped oysters, parsley, and beaten egg yolks.

  5. Fill the oyster shells with the mixture, sprinkle lightly with bread crumbs.

  6. Place in a 400°F (200°C) oven and brown delicately.

  7. Serve very hot, garnished with parsley.

Flavor stand-ins for the parsley

How well each one fits the dish's main ingredients (oyster, cream, flour, egg, pepper, bread):

  1. Nutmegbetter flavor fit
  2. Parsleythe original
  3. Capersabout as good a flavor fit
  4. Turmericabout as good a flavor fit

Fit is the average pairing score against oyster, cream, flour, egg, pepper, bread. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
