Prairie-chicken or Grouse

Ingredients

Directions

  1. Split the chicken open at the back and rub with butter.

  2. Fillet the chicken or cut out the breast; cut the remainder into joints and parboil.

  3. Broil the parboiled pieces and the breasts after rubbing butter over them.

  4. Sprinkle with pepper and coarse sea salt, then place a small lump of butter on top of each piece.

  5. Put in the oven for a few moments to soak the butter.

  6. Serve with currant jelly; for breakfast, serve on fried mush, or for dinner, on hot buttered toast.

  7. Garnish with leaves or watercress.
