Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they set gently with heat, giving it body.
Sour cream
Provides the creamy base and tangy body of the dressing.
Vinegar
Adds acidity that sharpens the flavor and balances the richness.
Sugar
Adds sweetness that rounds out the vinegar's sharpness.
Butter
Adds fat that smooths the texture and adds richness.

The step that matters

Cook over low heat without boiling. Egg proteins set and thicken the dressing gently, but high heat or boiling can curdle the eggs and leave the dressing lumpy and grainy. Stirring steadily over low heat keeps it smooth.
