Why it works: Cream and gelatin match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Bavarian Cream

Ingredients

Directions

Make the base

  1. Combine milk, sugar, and gelatin in a saucepan and heat gently, stirring until the gelatin dissolves, but do not let it boil.

  2. Strain the mixture into a tin pail and place the pail in a kettle of ice water; let it cool nearly to room temperature.

Finish and serve

  1. Whip the cream until frothy, then add the almond extract.

  2. Fold the whipped cream into the cooled mixture in the pail and beat until set.

  3. Serve plain or with jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the cooled mixture so the cream holds its shape when served.
Cream
Whipped into foam and folded in, adding lightness and a rich, soft texture.
Sugar
Adds sweetness and helps balance the richness of the cream and milk.
Milk
Forms the liquid base that the gelatin sets into the custard.

The step that matters

Do not let the milk mixture boil. Gelatin dissolves fully with gentle heat, and boiling can weaken its setting power, so the cream may fail to set firmly.

Swap the almond

How well each one fits the dish's main ingredients (sugar, cream, milk, gelatin):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Nutsfits less well

Fit is the average pairing score against sugar, cream, milk, gelatin. Candidates are from the same food group and used in at least 100 recipes.
