Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides the sweetness and forms the firm, chewy candy structure as the syrup cooks and cools.
Vinegar
Adds acidity that helps keep the sugar from crystallizing into grainy candy.

The step that matters

Boil until it hardens in cold water. As the syrup boils, water evaporates and its concentration rises, so the candy sets firmer. Stop too early and the taffy stays sticky; cook too long and it becomes brittle or scorches. The cold-water test checks that the syrup has reached the hard stage.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
