Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 27,047 recipes mention both. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Jellied Chickens

Ingredients

Directions

Prepare the chicken

  1. Cook the chickens in a small amount of water until the meat easily separates from the bones.

  2. Season the broth with salt and pepper.

  3. Once cool enough to handle, remove the bones and skin from the chickens.

  4. Place the meat, including gizzard, liver, and heart, into a deep pan or mold.

Make the jelly and set

  1. In the remaining broth, add the gelatine and lemon juice, dissolve in warm water, and boil until reduced to just under 1 quart.

  2. Pour the gelatine mixture over the chicken in the mold and let it cool.

  3. Once set, cut with a sharp knife and serve.

What each ingredient does

Chickens
Provide the meat and broth that form the dish's body and flavor.
Gelatine
Sets the reduced broth into a firm jelly that holds the chicken together.
Lemon juice
Adds acidity that brightens the flavor of the rich broth.

The step that matters

Boiling the gelatine mixture to reduce it. Gelatine only sets well when it is fully dissolved and the liquid is concentrated to the right volume. Boiling down to just under 1 quart concentrates the flavor and gelatin, so the jelly sets firm rather than soft or runny.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (chicken, pepper):

  1. Lemonthe original
  2. Limeabout as good a flavor fit

Fit is the average pairing score against chicken, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
