Ingredients

Directions

The book says “a moderately quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Place the barley in an earthen pudding dish and pour the boiling water over it.

Bake

  1. Add salt if desired and bake for about 2½ hours, until soft and water is absorbed.

  2. Halfway through baking, mix sugar with grated lemon peel and add to the dish.

Serve

  1. Serve warm or pour into cups and mold to serve cold with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barley
Its starch swells and softens in the water, forming the pudding's body.
Boiling water
Hydrates the barley during long baking so it turns soft and tender.
Sugar
Adds sweetness and, added halfway, sweetens the pudding without interfering with the grain's softening.

The step that matters

Adding the sugar halfway through baking. Sugar added at the start can slow the softening of starch in grains, so adding it halfway lets the barley soften fully first.
