Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard bread
Soaked in milk, it forms the body of the omelette and keeps it moist.
Eggs
Bind the mixture and set when heated, giving the omelette its structure.
Salted milk
Softens the bread and adds moisture to the mixture.
Suet or beef fat
Greases the pan and adds richness and flavour to the crust.
Chopped onion
Adds aroma and savoury flavour as it cooks with the eggs.

The step that matters

Soak the bread until soft but not broken. Bread that is too dry stays hard and grainy, while bread that falls apart turns the mixture mushy. Soft but intact bread absorbs the milk evenly and gives the eggs a tender, cohesive base that sets properly.

Swap the onion

How well each one fits the dish's main ingredients (bread, milk, egg, parsley, pepper, beef):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against bread, milk, egg, parsley, pepper, beef. Candidates are from the same food group and used in at least 100 recipes.
