What each ingredient does

Flour
Cooked in the fat until yellow, it thickens the liquid as it is added.
Mashed potato
Adds body and a soft, thick texture to the soup.
Onions
Browned in the fat, they add sweetness and savory flavor.

The step that matters

Cooking the flour in the fat. The flour must cook in the hot fat until it turns yellow so it loses its raw taste. Adding water too soon, or stopping early, leaves lumps and a floury flavor.
