Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

English walnuts
Provide the main body and nutty flavour of the filling.
Milk
Forms a thickened white sauce that binds the walnut mixture together.
Flour
Thickens the milk into a sauce that helps the filling hold its shape.
Butter
Adds richness and smoothness to the flour-thickened sauce.
Beaten egg
Coats the rolls so the bread crumbs adhere and brown evenly.

The step that matters

Frying the croquettes. Fry quickly in hot fat so the crumb coating browns and crisps before the cool, soft filling can soak up grease or break apart.
