Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Adds richness and fat, giving the sauce a smooth, full body.
Flour
Thickens the sauce as its starch swells and sets when cooked with the hot cream.
Tomato
Supplies the main flavour, acidity and colour of the sauce.

The step that matters

Cook thoroughly for 10 minutes. The flour's starch must be fully cooked in the hot cream to thicken the sauce and remove the raw, pasty taste of flour. Undercooking leaves the sauce thin and floury.

Flavor stand-ins for the tomato

How well each one fits the dish's main ingredients (cream, flour):

  2. Leekbetter flavor fit
  3. Spinachbetter flavor fit
  4. Tomatothe original

Fit is the average pairing score against cream, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
