Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body of the dish and turns very tender when steamed after frying.
Coconut butter or vegetable oil
Fat that fries the slices, adding browning and a rich mouthfeel to the surface.

The step that matters

Steam on low heat until very tender. Eggplant flesh is spongy and absorbs a lot of oil, and it only becomes soft and creamy when cooked long enough at low heat. Stopping early leaves it firm and greasy, while higher heat can scorch the surface before the interior softens.

Swap the coconut

How well each one fits the dish's main ingredients (eggplant, pepper):

  1. Limefits better
  2. Lemonfits better
  3. Cherryfits better
  4. Coconutthe original

Fit is the average pairing score against eggplant, pepper. Candidates are from the same food group and used in at least 100 recipes.
