Prune Whip

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the prunes

  1. Wash the prunes thoroughly and soak them in enough water to cover for three hours.

  2. Cook the prunes in the same water until they reach a marmalade consistency.

  3. Rub the cooked prunes through a sieve and sweeten to taste.

Make the meringue

  1. Whip the egg whites until stiff and fold in the chilled prunes until well mixed.

  2. Pile the mixture lightly on a buttered platter and bake at 400°F (200°C) until lightly browned.

  3. Serve with whipped cream or soft custard.

What each ingredient does

Prunes
Provide the main flavour and a moist, sweet, thick body to the mixture.
Egg whites
Whipped to stiff foam, they give the dish its light, airy structure and set when baked.

The step that matters

Folding the prunes into the whipped egg whites. Folding gently keeps the whites' trapped air intact; stirring hard deflates the foam, so the mixture bakes up flat and dense instead of light.
