What each ingredient does

Pineapple
Provides the fruit body and tart flavor of the filling, which softens as it is shredded and warmed.
Sugar
Draws juice out of the shredded pineapple and sweetens the filling as it sits.
Shortcake
Forms the tender, buttery base that holds the filling between and on top of its layers.
Whipped cream
Adds cool, rich fat and a light texture to contrast the warm, sweet filling.

The step that matters

Heat the pineapple mixture until thoroughly warmed. The sugared pineapple must be heated through so the sugar fully dissolves and the filling becomes uniformly thick and spreadable rather than watery or grainy.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
