What each ingredient does

Pearl barley
Its starch thickens the liquid as it simmers, giving the gruel its body and texture.

The step that matters

Let the mixture simmer gently. Gentle heat lets the barley's starch release slowly and soften the grains evenly. A hard boil can break the grains apart and make the gruel cloudy and uneven.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (barley, milk, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against barley, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
