What each ingredient does

Chicken
Provides the main protein, which becomes tender as it simmers in the broth.
Veal broth
Forms the liquid base that carries the flavour of the whole dish.
Curry powder
Adds the warm spice aroma and flavour that define the dish.
Cream
Adds richness and a smooth, mellow body to the broth.
Lemon juice
Adds acidity that brightens the rich broth and cream.

The step that matters

Stir in the cream and lemon juice before serving. Acid can curdle cream when it is hot, so adding the lemon juice to cream that is still boiling may cause separation. Adding it off the heat and stirring gently keeps the sauce smooth.

Swap the onion

How well each one fits the dish's main ingredients (veal, parsley, pepper, chicken, lemon, cream, rice):
