What each ingredient does

Pigeons
Provide the main meat, which becomes tender and flavourful as the soup simmers.
Strong beef stock
Forms the savoury liquid base that carries the flavour of the whole soup.
Flour
Thickens the soup's liquid into a smoother, more body-rich consistency.
Mushroom ketchup
Adds savoury, umami depth to the seasoned broth.
Lemon juice or vinegar
Adds acidity that brightens the rich stock and balances its savour.

The step that matters

Thickening with flour. Flour mixed into a cup of hot soup first disperses evenly without lumps; stirred in directly it clumps, and the starch needs a few minutes of simmering to fully thicken and lose its raw taste.
