Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main filling and their briny liquor, which flavours the sauce.
Bread crumbs
Absorb the oyster liquor and give the dish body, with a crisp top when browned.
Butter
Adds richness and helps the top brown and crisp in the oven.

The step that matters

Simmer gently without boiling. Boiling toughens oysters and makes them shrink and curl, so a gentle simmer keeps them tender and juicy.

Swap the mace

How well each one fits the dish's main ingredients (oyster, pepper, butter, walnut, flour, bread):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against oyster, pepper, butter, walnut, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
