To Roast Beef Beart

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wash the beef well and remove all blood from the pipes.

  2. Parboil the beef in boiling water for 10 to 15 minutes.

  3. Drain the water from the beef.

  4. Prepare a stuffing with bread crumbs, minced suet or butter, sweet marjoram, lemon thyme, parsley, salt, pepper, and nutmeg.

  5. Stuff the beef and roast it in a hot oven at 400°F (200°C).

  6. Baste the beef well with butter while roasting.

  7. Serve with melted butter and vinegar, or with gravy and currant jelly.
