Ingredients

Directions

  1. Boil the beef palates until the black skin can be easily peeled off.

  2. Parboil the sweetbreads with the palates.

  3. Skin and cut the palates into pieces; if the sweetbreads are large, cut them in half lengthwise.

  4. Dust the palates and sweetbreads with flour and fry them in butter until light brown.

  5. Stew them in the liquid from boiling, adding a browned mixture of butter and flour.

  6. Season with cayenne, salt, pepper, grated lemon peel, nutmeg, and white wine.

  7. Just before serving, stir in vinegar or lemon juice.
