To Kbsp Currants for Tarts
Ingredients
Directions
Gather perfectly dry currants, picking them from the stems before they are too ripe.
Place the currants in clean, dry, wide-mouthed bottles.
If desired, add some raspberries to the currants.
Soak a piece of sound bladder in water and tie it tightly over each bottle.
Set the bottles in a pan of cold water with a little straw at the bottom and between the bottles.
Heat the pan on the fire and simmer for about 45 minutes without boiling.
Remove the pan from the fire; the bladders will rise and then fall into the bottles.
After an hour, take the bottles out and cover them with strong paper.
Store the bottles in a dry, cool place, neck downwards.
