Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Sweetens the juice and dissolves into it to balance the sharp citrus.
Lemon or orange juice
Provides the acidity and citrus flavour that defines the shrub.
Rum
Acts as the spirit base that preserves the mixture during the long rest.

The step that matters

Stir the sugar until fully dissolved. Sugar that stays undissolved settles at the bottom of the cask and makes the sweetness uneven. Fine, finely pounded sugar dissolves faster in acidic juice, giving a smoother, evenly sweetened shrub.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, rum):

  1. Vanillafits better
  2. Pineapplefits better
  3. Bananafits better

Fit is the average pairing score against sugar, rum. Candidates are from the same food group and used in at least 100 recipes.
