What each ingredient does

Brandy
Carries the lemon oils from the rinds and gives the punch its main alcohol flavour.
Lemons
Supply the acidity and bright citrus aroma that balance the sugar.
Sugar
Adds sweetness that balances the acidity of the lemon juice.
Milk
Hot milk curdles on contact with the acid and alcohol, clarifying the punch as it is strained.

The step that matters

Adding the boiling milk. Hot milk added to acidic, alcoholic punch curdles and binds impurities, which the jelly-bag straining then removes. Milk added cold or without enough heat will not clarify the punch as intended.
