What each ingredient does

Carbonate of soda
Reacts with the acid to release carbon dioxide, which makes the drink fizz.
Tartaric acid
Reacts with the carbonate of soda to release carbon dioxide bubbles and gives a sharp, sour taste.

The step that matters

Pour the soda mixture into the acid mixture and drink immediately. The carbon dioxide that makes the drink fizz escapes from the liquid over time, so the fizz fades quickly. Drinking right away keeps the effervescence at its strongest.
