What each ingredient does

Treacle
Provides sugar that the yeast ferments into alcohol and carbon dioxide, adding sweetness and body.
Yeast
Ferments the sugars, producing alcohol and carbon dioxide that give the beer its character and carbonation.
Hops
Add bitterness that balances the sweetness of the treacle and help preserve the beer.
Essence of spruce
Supplies the signature resinous, piny aroma that defines the flavour of this beer.
Ginger
Adds a warm, spicy aroma and a gentle peppery bite to the brew.
Allspice
Contributes warm, clove-like spice notes to the aroma and flavour.

The step that matters

When fermentation ceases, seal the cask.. Yeast keeps releasing carbon dioxide while it ferments. Sealing before activity stops can trap pressure in the cask, while waiting too long exposes the beer to air and possible spoilage.

Swap the allspice
