Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and food for the yeast to turn into alcohol and carbon dioxide.
Egg whites
Bind impurities that rise as scum, which is skimmed off to clarify the liquid.
Ginger
Adds the spicy aroma and flavour that defines the drink.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Yeast
Ferments the sugar, producing carbon dioxide for fizz and alcohol.

The step that matters

Skimming the syrup. Egg whites coagulate and carry impurities to the surface as scum. Skimming thoroughly removes them, which keeps the finished drink clear and free of off-flavours.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits about as well
  4. Gingerthe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
