Plain Calf's Head Soup

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the broth

  1. Combine the cleaned calf's head and knuckle of veal in a large porcelain vessel.

  2. Place the marjoram, basil, and chopped onion in a clean cloth and add the cloth to the vessel.

  3. Pour in 4 quarts of water.

  4. Bring the mixture to a steady boil, seasoning with salt and pepper.

Strain and finish

  1. After about 4 hours, strain the soup through a colander, picking out the meat.

  2. Chop the meat finely and return it to the soup.

  3. Place the soup back on the heat.

  4. Chop the hard-boiled eggs.

  5. Add the chopped eggs, sliced lemon, and wine to the soup.
