Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Grease a large dish with butter and line the sides and edge with pastry dough, leaving the bottom unlined.

  3. Drain some liquor from the oysters and place them in a pan.

  4. Season the oysters with pepper, coarse sea salt, and spices.

  5. Add the chopped egg yolks and grated bread crumbs to the oysters.

  6. Pour the oysters and their liquor into the prepared dish.

  7. Roll out the remaining pastry dough for the lid and place it on top, crimping the edges to seal.

  8. Bake in the preheated oven until golden brown.
