Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chop the turkey meat finely.

  2. Layer bread crumbs in a buttered dish.

  3. Moisten the crumbs with a little milk.

  4. Add a layer of turkey and some filling.

  5. Place small pieces of butter on top.

  6. Sprinkle with pepper and salt.

  7. Add another layer of crumbs.

  8. Repeat layers until the dish is nearly full.

  9. Mix hot water with leftover turkey gravy.

  10. Pour the mixture over the layers.

Make the topping

  1. In a bowl, combine eggs, milk, melted butter, and a little salt.

  2. Add enough cracker crumbs to thicken the mixture for spreading.

  3. Spread the mixture on top.

  4. Add bits of butter.

Bake and serve

  1. Cover with a plate.

  2. Bake at 350°F (175°C) for 45 minutes.

  3. Remove the plate for the last 10 minutes to brown the crust.

What each ingredient does

Eggs
Bind the topping and help it set into a custard-like layer when baked.
Bread crumbs
Form the soft absorbent base layers that soak up milk and gravy.
Cracker crumbs
Thicken the egg mixture so it spreads evenly over the top.
Butter
Adds richness and helps the top crust brown in the oven.
Milk
Moistens the crumbs and loosens the egg topping for a tender texture.
