Rissoles of Chicken

Ingredients

Directions

Prepare the filling

  1. Finely mince the remains of a cold chicken and half the quantity of lean cold ham.

  2. Mix the minced chicken and ham, adding enough white sauce to moisten the mixture.

Shape the rissoles

  1. Roll out light pastry dough to about ¼ inch thick.

  2. Cut the dough into pieces, each measuring 1 inch by 2 inches.

  3. Place a small amount of the chicken and ham mixture in the center of half the dough pieces.

  4. Cover with the remaining dough pieces, pressing the edges together to seal.

Fry and serve

  1. Heat plenty of boiling lard or frying oil in a frying pan.

  2. Fry the rissoles until golden brown, about 1-2 minutes.

  3. Drain well and serve immediately on a napkin.

What each ingredient does

Remains of a cold chicken
Provides the main savoury filling and body of the rissole.
Lean cold ham
Adds salty, savoury flavour to the chicken filling.
White sauce
Moistens the minced filling so it stays juicy inside the pastry.
Light pastry dough
Forms a thin shell that crisps and browns when fried.
Boiling lard or frying oil
Conducts heat quickly to brown and crisp the pastry exterior.

The step that matters

Sealing the pastry edges. If the edges are not pressed firmly together, the filling can leak into the hot fat and the rissoles can open or burst while frying.
