Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Stew the chicken until tender and season the gravy.

  2. Remove the largest bones and scrape the meat from the neck and backbone.

Assemble the pie

  1. Line a 4 or 6-quart pudding dish with biscuit dough, ¼ inch thick.

  2. Layer part of the chicken in the dish, add butter, salt, pepper, and egg slices.

  3. Add the remaining chicken and season again; include new potatoes if desired.

  4. Pour enough gravy over the mixture to fill the dish.

  5. Cover with a ¼ inch thick crust with a hole in the center the size of a teacup.

Bake and serve

  1. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  2. Garnish with small celery leaves arranged in a circle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of meat that becomes tender through stewing.
Butter
Adds richness and moisture to the filling and gravy.
Cold boiled eggs
Add body and a mild richness to the filling between the chicken layers.
Biscuit dough
Forms a sturdy crust that holds the filling and browns in the oven.

The step that matters

Covering the pie with the crust and vent hole. The filling must be fully covered and the vent cut so steam can escape. Without a vent, pressure can lift or split the crust and the gravy can boil over.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, butter, pepper, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
