Veal Pie

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Combine veal and hot water in a stew-pan until covered. Add salt and bring to a boil, skimming off any scum.

  2. Cook until the meat is tender, then transfer to a dish to cool. Remove all small bones.

Assemble the pie

  1. Grease a tin or earthen basin with butter and line it with pie paste.

  2. Layer some of the parboiled meat in the dish, adding pieces of butter, pepper, and dredging with flour until white.

  3. Pour in some of the cooking water until nearly full.

Cover and bake

  1. Roll out a cover for the pie crust, making it about ½ inch thick.

  2. Cut a slit in the center of the crust and make small incisions on either side.

  3. Place the crust on the pie, trim the edges, and bake for 1 hour at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main body of the filling, becoming tender through slow simmering in water.
Wheat flour
Dredged over the meat to lightly coat it, helping thicken the cooking liquid around it.
Butter
Added in pieces through the filling to enrich the meat and add moisture and richness.
Pie paste
Forms the lined dish and crust that enclose the filling while it bakes.

The step that matters

Skimming the boiling veal. Scum rising during the boil is made of coagulated proteins and impurities. Skimming it off keeps the stock clear and the flavour clean.
